Bagoong-glazed Liempo

Nagawa ko to nung nag-crave ako sa binagoongan pero di ko alam paano lutuin yun. Matamis, may alat, at sobrang linamnam. Swabeng summer ulam lalo na kung paired with fruit shake.

Liempo, cut into bite size pieces
Shrimp paste (bagoong, preferrably ready-made)
Garlic, minced
Onion, finely chopped
red Chili (labuyo), chopped
Corn syrup
Eggplant, cut thinly into sheets
Cooking oil
green Mango, thinly sliced (optional)

  1. Salt the eggplants to release the juices then set aside for at least 30minutes.
  2. Fry the liempo until crisp and golden then set aside.
  3. Rinse the eggplants then pat with paper towel until dry. Coat both sides with cornstarch then shallow fry until crisp.
  4. In a separate pan, sauté onion, garlic, chili, and shrimp paste.
  5. Add corn syrup then sugar to taste.
  6. Add the fried liempo and mix to coat.
  7. Serve the glazed liempo with crispy eggplants and green mango on the side.
